My dad just turned 80! We celebrated with all of his favorite Filipino foods and desserts! My sister and brother covered most of the menu (keto and non-keto), and I was in charge of making his cake, which I am so excited to share with you about… And YESSSSS this is keto! 😉
Salted Caramel Chocolate Banana Cake

This cake was so easy and fun to bake and decorate. I used my favorite keto cake mixes and a homemade cream cheese frosting and ganache.
Let’s face it. Baking ain’t easy… especially keto baking! What I love about keto now, compared to when I first tried keto over 5 years ago, is that there are so many keto-friendly options and cake mixes. No need to experiment from scratch in the kitchen as much – and fail! It’s always a win when I use these cake mixes!

INGREDIENTS
CAKE
- Keto Chocolate Cake Mix (10% off with code: LA10)
- prepped as instructed and baked in an 8 inch cake pan
- Keto Banana Caramel Cake Mix (10% off with code: LA10)
- prepped as instructed and baked in an 8 inch cake pan

CREAM CHEESE FROSTING
- 8 oz Unsalted Butter
- 16 oz Cream Cheese
- 25 drops Vanilla concentrate (10% off with code: ketocoffeeandlipstick-10)
- 1/4 tsp salt
- 2-4 cups powdered sugar alternative
- add slowly until you get the consistency you want
- Instructions: Using an electric stand mixer, whip your butter then add cream cheese and continue whipping. Add vanilla, salt and powdered sugar and continue mixing until well combined.
- This recipe makes more than enough to frost this cake. Save extra frosting for later and refrigerate!

SALTED CARAMEL CHOCOLATE GANACHE
- 4-6 oz Heavy Whipping Cream
- 1 Lilly’s Salted Caramel Chocolate Bar
- Instructions: In a mug, microwave heavy whipping cream until hot. About 1-2 mins. Break up one Lilly’s chocolate bar and add to the warm cream. Wait 5 mins, then stir ganache. Continue stirring until chocolate thickens and forms ganache!

TOPPINGS
- 1 package of Double Chocolate Brownie Mini Cookies, crumbled.
- Fresh Strawberries, sliced.

This cake was a huge hit with my family… even non-keto fam and kids approved! The best part is, they had no idea it was sugar free, low carb, diabetic-friendly, and healthy!
