Keto Pandesal Recipe

Ingredients:

1 cup lupin flour
2 eggs
1 cup heavy whipping cream
1 tsp sour cream
3 tbsp butter, melted
2 tbsp sugar alternative
1 tsp baking powder
½ tsp psyllium husk powder
½ tsp xanthan gum
1 tbsp butter, cold.
½-1 cup almond flour. Set aside.

Instructions:

In a large bowl, add heavy whipping cream, sour cream, eggs and mix well with electric mixer. Add in melted butter and continue mixing. Add in lupin flour, monkfruit sweetener, baking powder, psyllium husk, and xanthan gum then mix using a spatula. Dough will be thick. Using a cookie scoop, divide and roll 12 balls in the almond flour you’ve set aside. Place into 8×8 baking pan, lined with parchment paper. Add small slivers of butter on top of each roll and bake at 400° Fahrenheit for 15-20 mins.
