Happy Filiketo Friday!
Hi! It’s been a while since we’ve had some ube waffles and this right here hit the spot! I’m most excited about this sugar free, gluten free, low carb WHITE CHOCOLATE MACADAMIA SYRUP that I threw together last minute.
What had happened was… I was in the process of making my ube coconut sauce that I usually make for my keto ube cheesecake, but I had just received more sugar free white chocolate chips so this happened and I ain’t mad about it at aaaaall.

There are quite a few keto-friendly pancake mixes available these days, so I haven’t been making my own mixes anymore. Who said keto/low-carb was so hard?!
My favorite low carb pancake mixes are from HighKey and Keto and Co. Also, with all the amazing flavor concentrates from One On One Flavors, you can really customize your pancakes and waffles with any flavors your heart desires, guilt free!

INGREDIENTS
- Keto pancake and waffle mix from Keto and Co (10% off with discount code, LA10) or High Key
- Ube concentrate (10% off with discount code, ketocoffeeandlipstick-10)
- Purple food gel (I used “Violet” From AmeriColor)
- 1/2 cup Sugar free white chocolate chips (10% off with discount code, ketocoffeeandlipstick)
- 1/2 cup Canned coconut milk (I love this brand. You can find it at any Asian market or in the Asain aisle at Target and Walmart, too… for under $3!)
- 2 pumps Sugar free macadamia nut syrup
- Mini waffle maker (If you don’t have one already, I don’t know what you’re waiting for? A keto kitchen staple for chaffles and all the mini waffles you can imagine! Also only $10 at Target).

INSTRUCTIONS
EASY UBE WAFFLES
- Prepare your keto waffles as instructed.
- Add a few drops of ube concentrate.
- Add a one little drop of purple food gel.
- Mix until well combined and make your waffles
WHITE CHOCOLATE MACADAMIA SYRUP
- In a small sauce pan, warm up your coconut milk then remove from heat and add white chocolate chips and macadamia nut syrup. Wait 3-5 mins before stirring. Allowing mixture to cool. Syrup will slightly thicken as it cools.
- Another option is to warm your coconut milk in a microwavable mug for 30-60 seconds and follow the same instructions listed.
