We recently celebrated my daughter’s 7th birthday. Oh how time flies! Feels like yesterday she was just a little baby… now she’s 7 going on 17!
When I asked her what kind of cake she wanted for her birthday, she said, “A unicorn cake, mama!” …so of course I had to! This was my first time making a unicorn cake and I wasn’t completely sure what I was doing, but we did it, ya’ll! And it wasn’t nearly as hard as I thought it would be… If I could do it, so can you!
3-layer Ube Chocolate Cake with Cheesecake Frosting

INGREDIENTS and MATERIALS
CAKE
- 1 box – Keto Chocolate Cake Mix (10% off with code: LA10)
- Prep as instructed: (4 large eggs, 6 tbsp butter, 1/2 tsp cider vinegar)
- 1 box – Keto Vanilla Cake Mix (10% off with code: LA10)
- Prep as instructed: (4 large eggs, 6 tbsp butter, 1/2 tsp cider vinegar)
- Add Ube concentrate (10% off with code: ketocoffeeandlipstick-10) and a little purple food coloring or McCormick’s Ube to get that purple ube color we know and love!
FROSTING
- 3 – 8oz boxes of cream cheese, room temp
- 3 – sticks butter, unsalted, also room temp
- 1 cup – Powdered sugar alternative
- Vanilla concentrate (10% off with code: ketocoffeeandlipstick-10)
- Food Coloring (From this kit, I used Deep Pink and Sky Blue)
You’ll also need:
- 4 – 6 inch cake pans
- Unicorn cake topper
- Birthday candle
- Cake decorating kit
- Parchment paper
- Coconut oil spray


INSTRUCTIONS
- Prep chocolate cake as instructed and pour evenly into two greased cake pans, lined with parchment paper. (Note: I ended up only using one half of the chocolate cake. Saved the other for a later dessert!)
- Prep vanilla cake as instructed and add ube concentrate. Pour batter evenly into the two other greased cake pans, lined with parchment paper.
- Bake cakes for 20 mins at 350 degrees F, or until toothpick comes out clean.
- Allow cakes too cool completely before frosting.

- To make the frosting, add cream cheese, butter and powdered sugar into electric stand mixer and let it do it’s thang for like 3 mins!
- Stop mixer and scrape down sides using a spatula and continue mixing until well combined… maybe another 2 mins or so?
- Divide the frosting into 2 separate bowls.
- In one bowl, add pink food coloring and mix.
- In othe other bowl, add blue food coloring and mix.
- Spoon your frosting into 2 decorating bags and frost as you like!
- I alternated using pink and blue frosting on the outside of the cake and when I smoothed it out, it gave it this cool marble effect… and turned the cake purple! I ain’t mad about it at all.
- For the Unicorn hair, I used tip #19 to get the pretty pink “hair” effect going on.
